Low-Carb Almond Milk Ice Cream


Oh hum yum yum yum!!!! Ice cream. Mouth. Watering. Yum yum yum. How dare you post a video on Facebook about how to make simple ice cream and not post a Low-Carb version?!?! What is wrong with people?!?! But hey, that's okay because I can create something for myself, and this post is to share it! I'm sharing especially for my friend Bella in Melbourne Australia who loves ice cream too!! 

Ingredients
- 1 cup unsweetened vanilla flavored almond milk 
- 1/2 tsp vanilla extract
- 1/2 tsp coconut extract (or another extract flavor of your choice) 
- 2 squirts of liquid Stevia (or liquid Sucralose or 2 packets of powdered sweetener) 
- 2 dashes of salt 

Instructions
- mix all ingredients in a freezer safe container 
- freeze overnight 
- when you're ready to eat, zap in the microwave for 25-30 seconds and your ice cream will be ready
- enduldge!!


Carb Breakdown: ONE for the cup of milk! (If you substitute a powder sweetener for a liquid, there will be more carbs) 

You can also put yummy additions into your ice cream such as - cocoa powder, chocolate chips, nuts, berries, SF syrups (Torani, butterscotch, chocolate, etc). Just try to add something sweet and SF (to keep the carb count down) and viola! Overnight instant ice cream!! Hope you like it!!

Low-Carb Frozen Pudding

So here's the first low-carb recipe I've literally just thrown together. It came out yummy too! And it's my favorite kind of recipe- a dessert!

Ingredients
-one packet of sugar free pudding. I used butterscotch. 
-3/4 cup unsweetened vanilla flavored almond milk 
-8 oz cream cheese 


Instructions
1. Melt cream cheese in the microwave. Two mins did the trick in my microwave. 
2. Stir in the pudding mix, then stir in the almond milk. 
3. Eat immediately OR freeze for a frozen treat! 

The texture is kinda like rice pudding. If you follow this recipe, you can make 6 individual portions. It's about 7 carbs per serving. 


When I went to eat a cup right out of the freezer, I zapped it in the microwave for 15 seconds which was enough for me to dig my spoon into and still have a frozen crunch! Yum!! Even on a cold night!

One Box, Two Low-Carb Desserts

One Box = Many Low-Carb Desserts

Craving a dessert? How about a frozen dessert? Trying to stick to your low carb lifestyle? Look no further, I have several simple recipes for you!!

Recipe #1: Low-Carb Ice Cream

Ingredients:

-Heavy Cream
-Sugar Free, Fat Free Pudding mix 

Instructions:

1. Follow the instructions on the back of the pudding box, but replace the milk with heavy cream. 

2. Freeze for full frozen effect! 

3. Voila! Easiest low-carb ice cream ever! And there's an assortment of flavors- cheesecake, vanilla, chocolate, pistachio, etc.


Carb Breakdown:

4 servings at 9.5 carbs for each serving. Perfect amount for an after dinner dessert! 

Recipe #2: Low-Carb Pudding 

Here's a second low-carb way to use a box of pudding. This one came from the genius within me ;)

Just follow the actual recipe on the back of the pudding box! You can make your pudding wholesome with whole milk or make it low fat with skim milk. 1 cup of any milk has only 12 carbs making this recipe a whopping 7.5 carbs per serving!
 
Recipe #3: The Lowest-Carb Pudding
 
Follow the box, again, but use unsweetened almond milk instead of skim or whole milk. I personally use unsweetened vanilla flavored almond milk from Giant food (Great Value brand), but either will work. Or use unsweetened coconut milk! (though I can't speak to coconut milk personally) Unsweetened (and make sure it's unsweetened) vanilla flavored almond milk is only 1 carb per cup. This pudding will be extra low-carb with almond milk!! It might need a dash of sweetener, but you'll have to try it out for yourself and see.
 
Any of these recipes are awesome for a dessert, snack, or even addition to any meal! And, as you see, one box of pudding can be altered to all carb counters!
