Low-Carb Cheesy Cauliflower

Low-Carb Cheesy Cauliflower
 
Here's a veggie recipe for ya. Not my favorite honestly, but maybe with some tweaking, it could work out. It tasted "fine" and of course I ate it though! I wouldn't make it like so again, but I still love cheesy cauliflower!
 

 
Ingredients
  1. 1 head of cauliflower
  2. 3 c of shredded cheese
  3. 6 tbsp of butter
  4. 1/2 c of heavy cream
  5. 3 cloves of minced garlic
  6. 1 tbsp of fresh thyme (or another seasoning)
  7. salt and pepper
Ready for the oven
 
Directions
  1. Preheat over to 400 degrees.
  2. Boil cauliflower until soft.
  3. Melt butter and mix in heavy cream and garlic.
  4. Once cauliflower is soft, place into a Pyrex bowl and pour butter mixture over it. Mix all the ingredients together.
  5. Sprinkle with thyme and cheese.
  6. Bake for 30 mins, until golden brown!


All done

So, as you can see, the bowl is filled with oil from the butter, not super appealing. Personally, I don't think this recipe needed 6 tbsp of butter, so I'll definitely try it again with just 2 tbsp. I'd also add some "actual" seasoning, not thyme. The flavor was lacking so I ended up adding salt and pepper when I went to eat it. I ate this dish as leftovers too and it reheated fine.

Low-Carb/Egg Fast Cheese Loaf


Tonight I took an existing recipe courtesy of my co-administrator of the Facebook page Low-Carb & Egg Fast Support group, Jaslyn, and transformed it to my taste! It was quite delicious too and a perfect dinner as well! 

Ingredients 
- 6 eggs
- 3 tbsp butter
- 3 tbsp olive oil 
- 6 handfuls of Mexican blend shredded cheese
- 1 tbsp green Tabasco hot sauce 

Instructions
- preheat oven to 350 degrees 
- spray the bread pan with cooking spray 
- melt butter in a microwave safe dish 

- add eggs, olive oil, and hot sauce to the bowl and blend with a hand mixer 
- gently fold in 4 handfuls of cheese 

- pour the mixture into a bread pan and sprinkle 2 more handfuls of cheese on top

- bake for 30 mins
- let sit for a minute or two to allow the butter to seep into the loaf 

- slice into 6 pieces and enjoy!! 

I ate 2 slices- equivalent to 2 eggs, 2 fat, and 2 (handfuls) cheese for one meal. It was quite filling and, as I mentioned, delicious!

Low-Carb/Egg Fast "Muglette"


So today is the start of my 5 day, low-carb, egg fast. It's a fast which is suppose to help break through the stall in weight loss that I have been experiencing for months! There's a ton of research to support it too! Just google Egg Fast. But I know you're not going to, so here's the support.....

For the egg fast, all you can eat for 5 days (I chose 5 days but it can be anywhere from 3-30 days really), is eggs, fat, and protein. So my first egg fast meal is a "muglette," that's a mug omelette ya'll! Like an omelette in a mug, yep! 

Ingredients
- 3 eggs
- 1 tbsp cheese
- 1 tbsp meat (meat is not technically egg fast approved) 
- cooking spray 
- salsa, olives, veggies (optional, though also not egg fast approved) 


Instructions 
- spray the inside of the mug with a cooking spray 
- beat 3 eggs in the cup
- add in some cheese and meat (this morning I used shredded chicken, but you can also use pepperoni, sausage, ground beef, anything that you love!) 
- add in your optional ingredients too (I didn't for the purpose of this fast)
- microwave the mug for 1 minute and stir
- then microwave for another minute and let cool
- and eat! 

It's very easy and tasty! It's good for the egg fast and for an everyday breakfast!

Veggie Lasagna

We all crave a little Italian in our lives... Right? Well tonight I did. But duh- I'm not going to eat the pasta, so I figured out another way to make a layered pie with all veggies. It's actually simple. And this recipe is so great for the working mom (& dad) because you can put it all together the night before and, when you get home, just pop it in the oven for 25 minutes for dinner! Simple, fast, efficient. All while still getting your kids homework done for the night. Sounds like a recipe I can bake with!

Ingredients 
- 2 zucchinis
- 2 yellow squash
- 1 red pepper
- mozzarella cheese
- 2 cups of tomato sauce
- *optional: Italian seasoning
- Pam 


Instructions
1. Preheat the oven to 350 degrees 
2. Slice up your veggies. Don't make your slices of zucchini and squash too thin. And cube your red pepper. 
3. Make one layer of zucchini at the bottom. 
4. Spray with Pam. 


5. Next, layer with 1/2 cup of tomato sauce, just enough to cover the zucchini slices. 
6. Now layer with some mazarella cheese. I used about a handful. *optional: add some Italian seasoning. 


7. Place squash slices next. Then another 1/2 cup of tomato sauce and another handful of mozzarella cheese. 
8. Place the red pepper cubes now. Then another 1/2 cup of tomato sauce and mozzarella cheese. *


9. Lastly, place another layer of zucchini and squash (yes, I mixed it up this time!) and 1/2 cup of tomato sauce and mozzarella cheese. *


10. Cook at 350 degrees for 20-25 mins and enjoy! 


Now wasn't that an easy recipe?!? I thought so!

Low-Carb Pizza

So... A coworker of mine shared this recipe with me, and I decided to change it up a tad to make it my own. I am SO incredibly happy with the turn out! It tastes like a delicious pizza that you'd buy at your local pizza joint! This is one that you HAVE to try. 

*Note: This recipe is not low fat or low cholesterol.*

Ingredients 
(for the personal pan pizza crust): 
2 cups of mozzarella cheese
2 eggs
A few sprinkles of Italian Seasoning 

(for the pizza toppings):
1/4 cup of tomato sauce
Green olives
Pepperoni slices 
(Or any toppings of your choice) 

Instructions:
1. Preheat oven to 450. 
2. Line a round cake pan with parchment paper. This helps so the pizza doesn't stick to the pan. 


3. Mix the eggs, cheese, and seasoning in a bowl (like you're making an omelette). 


4. Pour the mix into the cake pan and spread evenly. 


5. Bake for 15 mins. 


I just HAD to peak! Doesn't it look great?! It smells great too!! 

6. While you're baking your pizza, get the toppings ready. I cut green olives in half and cut up large pieces of pepperoni into fourths. Prepare 1/4 cup of tomato sauce for the pizza. 


7. When the pizza is done cooking, add the tomato sauce, green olives, and pepperoni (or toppings of your choice) to the top of the pizza. 


This is what the pizza should look like after the first 15 mins. 

8. Now stick the pizza back in the oven for another 10 mins to continue baking
9. When the timer rings, take the pizza out, let cool for a minute or two, cut into fourths and ENJOY! I promise that you will!! 


This recipe is a MUST try, like I keep saying! Even my daughter who doesn't ever ever eat pizza ate a whole slice of this!! I can't wait to make more! 

Carb Breakdown:
Personal Pan Pizza crust= 8 carbs
Tomato Sauce= 4 carbs
Toppings= 0 carbs!
Total carb content for this entire pizza= 12 carbs!!! Wow!!!
